I REALLY stink at blogging.

I feel like I never have anything to write about :P
but I guess I can share some pictures

Here is Emmie napping in her big girl bed for the first time

Emmie is REALLY into helping us with everything these days. Here she is helping us clean our old apartment lol

And no one cares, but I have to share our fluffy rainbow :)

I think it's the first time all our diapers have ever been all washed and stuffed at the same time. So I took a picture :)

Not much is going on with us. We just got settled into our new place. Emmie is LOVING our yard. Things are pretty boring right now, but I guess that's a good thing :) I'm so ready for fall. I'm ready for cooler weather and I'm excited to decorate for the season! has too many ideas that I have to try :)

Meatloaf Cupcake Recipe

Meatloaf Cupcakes

Preheat oven at 450degrees

1lb of ground beef
¾ C oatmeal
½ tsp oregano
2 T parsley or 1 T crushed parsley
2/3 C Milk
1 tsp Salt
Pinch of pepper
Pinch of onion powder
2 eggs

Wisk together eggs, oregano, parsley, milk, salt, pepper, onion, and oatmeal. Using your hands or a spoon combine meat with mixture.


1 C Ketchup
1 TB mustard powder [we didn't have mustard powder so I used spicy brown mustard and it turned out great]
1½ TB brown sugar

Put meat mixture into sprayed cupcake pan and then spread sauce on each cupcake. Bake for 15-20 min. Make desired mashed potatoes that you want to pipe on top of the meatloaf cupcake. I used the box kind to make it faster. Then top with your favorite toppings: Peas, carrots, onions, or parsley. Then Enjoy!

What Have I Been Up To?

Well...not much...I'm pretty boring :)

But I was pretty excited to find these linen baskets at the dollar store! We've been debating getting baskets for Emmie's toys and books since she's learning how to pick up. I'm glad I found these! Not only are they cute, but I couldn't pass up $1/basket when we had been looking at ones at Target that were $6.99[on sale...] per basket.... Definitely found myself a bargain here!

They were the perfect solution for organizing her little library! Yes, my child loves books.

For Fourth of July, I made chocolate covered strawberries. They were a pretty big hit at the party :)

Haha, so this photo below is random, but these moments are so rare! I was making her lunch and turned around to put her plate down and what do you know...she was asleep lol. In her booster chair...that couldn't have been comfortable.

Here is my mess of a child :) She is into wearing our shoes now.

In this picture, Emmie was participating in a free Tavaci class. Our town does free lunches for kids at the park every weekday [sweeeeeeeeeeeeeet! lol] and today the local Tavaci company came out to do a free class. Pretty much it's kids tapping sticks to a song. The kids had fun, but there's no way in heck I'd pay for these classes. Emmie can hit sticks together at home while I sing. lmbo.

I will say though, I can't wait until she's old enough for a dance or gymnastics class. I'm gonna look into swimming lessons for toddlers on campus in the winter. Someone mentioned they offer it and I think Em

We had a cupcake themed meal the other day. :)
Meatloaf cupcakes [seriously SO easy and only takes like 30minutes total] and chocolate cupcakes with buttercream frosting and sprinkled with cinnamon.

The whole family loved it, even Emmie! I was quite surprised when she dug into her meatloaf cupcake, took a bite and exclaimed "MMMMM!" haha. Anyways, just wanted to share my pretty pictures LOL.

This post may be a little all over the place. I have a few different things to post about and with how blogger uploads pic I decided just to upload a bunch of pics write about them then do the next bunch. So, I apologize for the post not flowing.

Not much new is going on. It's finally "warm" here. It's currently 73 degrees outside with a good breeze. This morning it was 60 something degrees when we were at the splash park [pics down below.] haha. That is warm to us.

I'm finally going to start working out. FINALLY. I found a work out buddy, so we're going to go to Zumba, Kick Boxing, and Abs that Rock! classes on campus. I'm so excited! My first Kick Boxing class is tonight! :) It'll be nice to do something for me for a change.


So, after Emmie's baths I always sit her in the sink so I can do her hair. Well this time she immediately grabbed my blush and brush and started to pretend to put it on. She was smiling and giggling at herself. It was the cutest thing I had ever seen. I love her so much. It made me realize how much she is watching me, every single little thing I do--even mundane things such as apply makeup. I hope I can be the example she deserves <3

We went to the Splash Park today :) Luckily I didn't forget my camera! But...ofcourse Emmie wanted nothing to do with taking good pictures. lol

I decided to let Emmie make daddy his Father's Day card. It was really easy. I wrote on the paper with white crayon, she went to town with water colors over it. Tada!

Summer is here!

I'm so excited to be able to spend time outside finally!!!
Maybe I'll actually have pictures to post from now on! haha!

So what's new? Emmie is almost 16months. Today at church the nursery teachers said we can start bringing her and introducing her to nursery since they only have ONE kid in their class! LOL! I am so excited!

Oh! When we were getting out of the car today to go into church there was a tall, bigger, nearly bald man getting out of the car next to us and Emmie starts pointing and yelling "Pa-Bo! Pa-Bo!"....Pa-Bo is what she calls my dad. It was cute and kinda made me sad, I wish we were closer to family!

Emmie is starting to pick up on words a lot lately, it's been fun! Some NEW words/phrases are "Elmo" [sometimes comes out mel-mo], "Me-Me" [What she calls herself, sometimes it comes out "I[like eye]-E" and once she said Emmie perfectly], "Good Girl", "it's a [fill in the blank]". There's more, my brain just isn't working.

She's REALLY into Elmo lately. We have two Elmo movies and we rent atleast one different Elmo's World show from the library once a week. She recently just got an Elmo Stuffed animal...she drags it EVERYWHERE and refuses to sleep without it.

As you can see, he's not small!
